Peach Mango Fruit Leathers

These fruit leathers are every bit as fun as Fruit Roll-Ups, but without the artificial dyes and sugar. They’re also easy to make. Get creative and experiment with different fruit varieties such as strawberry, apple, watermelon, pineapple, or cherry. Store in an airtight container at room temperature for 1–2 weeks.

Peach Mango Fruit Leathers recipe
Ingredients
1½ cups diced peaches
1½ cups diced mango
½ cup water
Preparation
Preheat oven to 175°F (or lowest temperature). Line baking sheet with parchment paper.
Add fruit to food processor, and pulse until partially blended. Add half of water, and pulse again until only a few chunks remain. Add remaining water, and pulse until completely smooth, about 2 minutes.
Transfer fruit to prepared baking sheet, and smooth out until surface is even. Bake 3 hours, or until surface is glassy and dry.
Remove from pan, and cut into 10 strips while still on parchment paper, being sure to also cut through parchment paper, which will keep the roll-up from sticking to itself as you roll it. Tightly roll each strip, with parchment paper on the outside. Tie with a small piece of string, and store in airtight container.
