Baked Apple Heaven

When you’re in the mood for something sweet but don’t want the calories and fat that come with chocolate cake (or, fill in the blank), try these sweet baked apples. They couldn’t be easier to make and they’re topped with maple syrup, spices, pecans, and chewy oats.

Looking for a creative way to enjoy healthy food that’s still tasty? Then this simple apple treat is for you. You can tweak and modify according to your preferred flavor profile. For example, if you want to reduce the grams of sugar, substitute erythritol, stevia, and/or monk fruit for maple syrup. And if you’re on a grain-free diet, try almond flour.

Ingredients

  • 4 large organic apples (Honeycrisp or Empire
  • 3/4 cup old-fashioned gluten-free rolled oats
  • 1/3 cup pecans, chopped
  • 1/4 tsp. grated nutmeg
  • 1 tsp. ground cinnamon
  • 1 1/2 Tbs. coconut oil, melted
  • 1 Tbs. organic maple syrup
  • 1/2 cup apple cider

Preparation

  1. Preheat oven to 425ºF.
  2. Wash apples under warm water and dry skin. Using a knife or corer, core apples, making sure to remove the entire core and pips. Keep skin on. Grease a baking dish with cooking spray, then place applies in dish.
  3. In a bowl, combine oats, pecans, and spices. Then stir in melted coconut oil and maple syrup. Mix well. Divide oat mixture evenly among apples, placing it in the cored-out centers. Pour apple cider in bottom of baking dish, then cover with foil and bake for about 30 minutes total, basting apples with cider every 5 to 10 minutes. Uncover apples for the last 10 minutes, baking until fork tender. Enjoy!
