Quickie Gazpacho

The fresh tomatoes, cucumbers, and peppers are the nutritional stars of this gazpacho, but don’t sleep on the tomato juice. Quickie Gazpacho recipe
Ingredients
- 4 cups red heirloom tomatoes, chopped, with juices
- 1 cup cucumber, peeled and chopped, plus ½ cup peeled and chopped for garnish
- 1 cup tomato juice
- 1⁄4 cup celery, chopped
- 1⁄4 cup red bell pepper, chopped
- 1⁄4 cup sweet onion, chopped
- 2 Tbs. olive oil
- 1 Tbs. red wine vinegar
- 1 tsp. black pepper
- 1 tsp. sea salt
- 1 tsp. Worcestershire sauce
- 1 clove garlic, minced
- 1⁄2 tsp. hot sauce (optional)
Preparation
Purée all ingredients in a blender, until smooth. Serve at room temperature or chilled. Garnish with chopped cucumber and sour cream, if desired.
